Karva Chaut day was also the last day before school got over, and I wanted to make something nice for the kids, but wasn't sure if I could manage it. Then I found some leftover
hing-wala aloo in the fridge, and make aloo paratas for the kids.
Leftover aloo subji
Smash the subji, so it is smooth enough to use as a stuffing.
Make regular aloo paratas, with lots of ghee!
