Coin Pizza

The kids have been hankering for home made pizza for awhile, but I've been too lazy to break out a packet of yeast to make the base. So when I saw these whole wheat coin pizza bases at the grocery store, I couldn't resist picking them up. It didn't take long to make the pizza paste, and we had a really lovely meal with practically no work.

3 large tomatoes, chopped
6-8 pods garlic, chopped fine
6 baby corns, diced (or cut vertically)
1 tbsp butter
12-15 black olives
1 tsp chilli flakes, or to taste
1 tsp oregano, or to taste
Salt to taste

Ready made pizza bases
Cheese, grated

Method:Heat the butter, add garlic and baby corn, and saute till brown.
Add tomatoes, and saute till the tomatoes turn mushy. Mash down with the spoon.
Add chilli flakes, oregano, salt. Do a taste test and add sugar if needed. Keep aside.
Cut the olives into small pieces.
Grate the cheese.
Spread the sauce on the pizza bases. Sprinkle chopped olives. Cover with grated cheese.
Grill in the oven for 2 minutes at 175 degrees.

Pizza loaded with veggies

I saw the loveliest thin crust pizza bases at the grocer and just had to pick them up. Since I was feeling a little guilty about feeding the kids too much 'outside-food', I topped it with loads of vegetables, and some home grown basil. Was nice watching it all disappear!

3 tomatoes, chopped fine
4-6 pods garlic
Salt to taste
Red chilli powder to taste
2 tbsp butter
4-6 leaves of basil, torn

1 medium broccoli 
10 baby corns

4 pizza bases
Grated cheese

Method:
Sauté the broccoli and baby corns in 1 tbsp butter till the rawness goes
Meanwhile, sauté the garlic, and tomatoes in butter till the tomatoes are mushy. Add salt and chilli powder, and the basil. Mix well and turn off flame.
Spread the tomato sauce on the pizza base, top with veggies and cheese nd grill in the oven at 200 degrees for 5 minutes.
Cut into slices and serve hot

Pizza from scratch

The kids love pizza, and ever since I started baking my own bread, I've been wanting to make pizza from scratch. Haven't been able to do so yet, because most of my kids' pizza cravings are last minute ones, and I really don't have enough time to make the base. But this time, I planned it advance, and pulled it off!
Recipe is essentially a combination of two old ones, but when you do something for the first time, it is time to celebrate!

The pizza base was made by following my recipe for basic bread. After knocking the dough down, I rolled it into bases 1/8th inch in thickness, and let them stand for a further 20 minutes. I baked them for 10 minutes, before taking them out for assembly.


For pizza sauce
Heat 1 tbsp olive oil in a kadhai. Add 4 garlic pots, and 1 medium onion (both chopped fine), and saute till the onion turns transparent. Add 4 medium tomatoes chopped into small bits, and cook on low with a cover on, till the tomatoes turn mushy. Add red chilli powder, salt and sugar to taste, and take off the fire. When cool, blend in the mixer till it gets a smooth consistency.

To assemble

Spread pizza sauce on a the partially baked pizza base, top with lots of grated cheese, and bake for a further 10 minutes.  Sprinkle oregano and chilli flakes before serving.

Veg pizza

Ever since I started baking bread, I've been wanting to make pizza from scratch, but for one reason or the other, it has been eluding me. What I did do, however, in order to assuage my conscience slightly, was to create this rather elaborate veg pizza, using a store bought base.
Kids happy, mother almost as happy!


For pizza sauce
Heat 1 tbsp olive oil in a kadhai. Add 4 garlic pots, and 1 medium onion (both chopped fine), and saute till the onion turns transparent. Add 4 medium tomatoes chopped into small bits, and cook on low with a cover on, till the tomatoes turn mushy. Add red chilli powder, salt and sugar to taste, and take off the fire. When cool, blend in the mixer till it gets a smooth consistency.


Method:
Saute American corn, capsicum, bell peppers in a bit of butter till the corns start turning brown.

Spread pizza sauce on a store bought pizza base, sprinkle the sauteed vegetables, top with lots of grated cheese, and pop it into the oven till the cheese melts. Sprinkle oregano and chilli flakes before serving.

Kiddy pizza (with ready made base)

With kids at home for the entire week, the sensible thing would have been to just order their favourite takeaways. But I took it on as a challenge to see if I could satisfy them with home cooked food, and this was what they had for lunch on the first day.

Add 4 medium tomatoes chopped into small bits, and cook on low with a cover on, till the tomatoes turn mushy. Add red chilli powder, salt and sugar to taste, and take off the fire. Spread pizza sauce on a store bought pizza base, top with lots of grated cheese (my kids dislike veggies, so I don't add it), and pop it into the oven till the cheese melts. Sprinkle oregano and chilli flakes before serving.
